Samples of wheat for human nutrition, wheat flour, bread and noodles were analysed for different trichothecenes and partly for zearalenone (ZEA). The toxin contents for deoxynivalenol (DON) and ZEA were compared with the maximum tolerated levels recently discussed for foodstuffs in Germany. The limits for DON were exceeded in 20, 15, 5 and 9 % of the samples of wheat, wheat flour, bread and noodles respectively, the limits for ZEA in 4 and 0 % for wheat and wheat flour respectively.
